Vanilla cupcakes (makes 24 cupcakes):
3 sticks sweet butter, softened
1 1/2 cups superfine sugar
3 cups self-rising flour
1 1/2 tsps baking powder
6 eggs
1 1/2 tsps vanilla extractPreheat oven to 350F (175C)
Bake for 18-20 minutesChocolate Buttercream Frosting:
1 stick of butter (unsalted)
4oz baking chocolate
1lb (16oz) confectioners sugar
1/4 tsp vanilla
1/3 - 1/2 cup milkMelt the chocolate and the butter together, making sure not to burn it (it’s easy to do, and makes your whole kitchen smell burnt!) Pour the chocolate/butter mixture into the sugar mixture, add vanilla and milk gradually as you need it - always start low, or your frosting will be runny, and that is sad.

Is this not the most adorable thing you’ve ever seen?! The red velvet would add such an amazing pop of colour on a hessian tablecloth and crisp white linen. I’m so tempted to attempt these for my wedding, but something tells me they are a lot harder to DIY than they look! And that’s just the collecting-jars-bit. ;)
